Yesterday, my day was like any other of mine. I woke up, wide awake actually, at 9:30am after falling asleep around 2:30am. I felt that I should have been a lot more tired. I'm glad that I wasn't tired because I got a lot of laundry done!
I also stopped by work to find out my schedule for next week and it turned out that I didn't get my requested days off. I requested Thursday and Friday off because on Thursday, I turn 21!! I showed it to my manager and it's been changed. Rob and I are planning on going down to Seattle, as I've never been there before! We want to do the underground tour and visit the first Starbucks! It's a two and a half hour drive, but that's why we're making a day of it. I'm so excited!
Later on, Rob left for work and I decided to start re-reading one of my favourite series, Something Borrowed by Emily Giffin. I also watched some chick flicks :)

Enough about yesterday! This morning I realized that I finally had all the ingredients for VOO! VOO stands for Vegan Overnight Oats. I got the recipe from Oh She Glows, and I used to eat it ALL the time when I was in Alberta. It's pretty filling and it isn't too bad for you. There are a lot of variations and I highly suggest you check them all out on Angela's blog.
The standard one that I always make is just peanut butter and banana. Here are the ingredients:
- 1 banana
- 1 spoonful of peanut butter
- 1 tbsp of maple syrup
- 1 cup of oats (I use 'Quick' in the morning..but use regular if making at night for the next morning)
- 1.5 cups of milk
- 2 tsp of Chia seeds
If you're using the 'Quick' oats, let them sit for a little while or just follow the directions on the bag and then use them in your VOO. It doesn't look very appetizing in this picture, but golly it's good.
I also had some hot lemon water! Very refreshing :)
